Winter Spiced Brownies (GF, DF)

It's that time of year when I start baking Christmas goods! Brownies and Christmas are my two favourite things so why not chuck them together and see what happens?
The recipe is quite like the Peanut Butter brownies I made however I tweaked it a little to add festivity to it!

Winter Spiced Brownies (GF, DF)

200g ground almonds
80g cocoa powder
310g icing sugar
2 tsps mixed spice
1 tsp coffee granules
30g dried cranberries
30g dark choc chips
4 egg whites
pinch of salt
2 tsp brandy

1. Preheat the oven to 180 degrees. Line a square baking tin (20cm  x20cm)
2. In a large bowl mix together the dry ingredients - icing sugar, ground almonds, icing sugar, mixed spice and a pinch of salt, keeping aside the coffee granules, dried cranberries and chocolate chips.
3. Dissolve the coffee granules in 3tbsp of cold water.
4. Make a well in the centre of the mixture, add in the coffee, egg whites and brandy. Mix together until you have a thick, smooth mixture.
5. Add in the cranberries and choc chips, mix until evenly dispersed.
6. Pour into the tin. You can also sprinkle some cranberries and chocolate chips on top of the mixture too.
7. Bake in the oven for 35 minutes.
8. Leave to cool in the tray before transferring to a cooling rack. Once cooled, cut into squares. 

You don't have to add in the brandy, it just adds a little more depth to the brownies.
